Tahini (sesame seed paste) ¼ cup
Garlic cloves 2-3 (peeled)
Lemon juice 3-4 tablespoons (freshly squeezed)
Olive oil 2-3 tablespoons (extra virgin)
Salt 1 teaspoon (or to taste)
Ground cumin ½ teaspoon (optional, for flavor)
Cold water 2-4 tablespoons (to adjust consistency)
Paprika ¼ teaspoon (for garnish)
Fresh parsley 1-2 tablespoons (chopped, for garnish)
Olive oil (for serving) Drizzle (extra virgin, for garnish)

Difficulty Level: Easy

Instructions

1 If using dried chickpeas, soak them overnight and cook until soft. If using canned chickpeas, drain and rinse them thoroughly under cold water.
2 In a food processor, combine the cooked chickpeas, tahini, garlic cloves, lemon juice, olive oil, salt, and ground cumin (if using).
3 Blend the mixture until smooth. If the hummus is too thick, gradually add cold water, one tablespoon at a time, until you reach the desired creamy consistency.
4 Taste the hummus and adjust the seasoning, adding more salt or lemon juice if needed.
5 Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with paprika and fresh parsley.
6 Serve the hummus with warm pita bread, fresh vegetables, or as part of a mezze platter.
